To support such a rich filling, a solid base is essential: the Bizantino starts with high-gluten flour, capable of withstanding over 48 hours of fermentation. The sourdough starter, refreshed three times, is used to start the first dough in the evening. In the morning, during the second kneading, DOP licorice powder is dissolved directly into the dough to infuse it deeply with flavor, along with cream butter, egg yolks, and sugar. The 66% dark chocolate, denser than classic varieties, is incorporated last and with a light hand, so as not to break the gluten network. After proofing in a paper cup, baking, and cooling upside down, the panettone cold-glazed with a dark chocolate glaze, chopped licorice, and a licorice root crumble.
