It all begins the day before, with three feedings of the sourdough starter at four-hour intervals, until it triples in size and smells of milk and flowers. In the evening, the first dough is prepared: type 0 flour, yeast, some cream butter, pasteurized egg yolks, and sugar, left to rise for twelve hours. At dawn, the second dough is prepared, incorporating the remaining flour, salt, the remaining egg yolks, and organic honey, until the dough is shiny and elastic. Only at this point, on low speed, are the dough, the candied orange peel from Sibari, and the raisins—squeezed after soaking overnight Passito di Saracena—incorporated. The dough is shaped by hand, rested, and allowed to rise in paper cups until it reaches the rim, then baked at a controlled temperature and cooled upside down to set the honeycomb texture.
