The making of Bruzio begins long before the dough is prepared, with the careful handling of the figs: after being sun-dried, the Dottati DOP figs are baked in the oven for a few minutes and then broken by hand, so as to preserve their soft flesh rather than turning them into a paste. The sourdough starter, refreshed three times, is used to prepare the first evening batch of dough. In the morning, during the second kneading, Calabrian chestnut honey partially replaces the sugar and adds aromatic depth, while butter and egg yolks build the structure. Finally, at low speed, the fillings are added: fig pieces and dark chocolate chips, carefully measured so the chocolate doesn’t weigh down the dough. Shaping, proofing in paper cups, baking through to the center, and cooling upside down complete a panettone dense panettone .

TASTING NOTES
The most rustic of the four, and the one most closely tied to the countryside. The Fichi Dottati DOP figs from Cosenza, a variety unique in the world, offer a rich sweetness and the aroma of ripe figs, complemented by chestnut honey with a hint of the forest. The 75% dark chocolate provides a contrasting element—dark and bitter—and holds the whole together. A dense slice, to be savored slowly.
